The Fajita Recipe
This is the tortilla wrap recipe that I used when I first experimented with making my own plastic free fajitas:
It calls for:
400g self raising flour
1/2 tsp salt
300ml warm water
3 tbsp extra virgin olive oil
I chose this recipe because it uses the least ingredients of all the ones I'd found and I like it simple. I can't be bothered with going back out to the shops!
I find that either flour works okay, I don't really taste any difference but you might so have a play.
I don't use oil in the pan after the first one, and I don't cook them until they're crispy. I can make about 10 tortillas and 2 pizza bases (basically thicker tortillas) from this recipe. I always freeze a few too as they defrost really quick and only take a couple of minutes to heat up.
They're really good with curries too.
To make a plastic free fajita meal use mushrooms instead of meat. Portabello mushrooms work well. One red onion, one yellow pepper and two portabello mushrooms will be enough for 2 people. Use some fajita season made using herbs from Sainsbury's (see my plastic free starter tips). Opt for The Real Basmati Rice or rice from your nearest bulk store as a side.
Make your own guacamole from loose avocados and if you want quick Salsa and Sour Cream, get them from the crisp section of your supermarket instead of the fridge section as these will be in glass jars. You can also make your own salsa by chopping up some tomatoes and mixing it in with some chives and spring onion!
